Thought I'd share this recipe that can also be found on my blog.
This creamy avocado pasta is vegetarian and vegan friendly. Just be aware that most grains do contain traces of gluten and spelt pasta most certainly contains small amounts of this protein composite.
1) 50 to 100 grams of spelt pasta.
2) 1/2 avocado.
3) 1/2 lemon.
4) 2 cloves of garlic.
5) 4 tablespoons of virgin olive oil.
6) 1 teaspoon of himalayan pink crystal salt.
7) 1 teaspoon of basil.
Step 1: Cook spelt pasta as per instructions on the packet.
Step 2: Pour the olive oil, garlic and squeeze the lemon into a blender and then process.
Step 3: Scoop half the avocado into the blender, himalayan salt and basil, then mix together.
Step 4: Once your pasta is done and you’re happy with the way it’s cooked, scoop on your sauce and then garnish with some lemon zest for the finishing touches.

Does this microwave/reheat well? I live alone and tend to cook multiple meals at once, freeze the leftovers and then take them for lunch as needed. I would think the avocado would brown when reheated.
