I love dumplings! Growing up, we ate them religiously - and to this day my mother, sister, and I still make them. Traditionally - our dumplings include wheat flour, eggs and water. Altho delicious - it was my duty to recreate a gluten+egg free version of them. They turned out great... 'al dente' to perfection (firm with a delicate bite).
These dumplings are incredibly versatile. You can use them in soups, stews, pasta dishes or however you please. In this instance, I made a dumpling pasta salad that was fresh and very filling.
This will be another 'to feel' recipe.
